Baked Spicy Herby Potato Wedges

Potato Wedges – herbed, cheesy, spicy, salty. Accepted in any way. Can be made in a jiffy and rather than rely on store bought processed stuff, we enjoy these as a quick afternoon snack or as a side to burgers.
Any spices can be added to the seasoning. As elder one has taken a liking to really spicy stuff , we cranked it up a bit and enjoyed it. For my little one, I made one batch with just salt and a dash of jeera (cumin powder). Either way we liked it. Make it and serve it as it is or with burger / sandwiches.  

A great party idea too ! Versatile potato lends itself to so many dishes across cuisine / course. From a warm Hungarian Potato Salad, quintessential to Indian Chaats like Dahi Batata Puri , Dabeli, and Fcatbreads with stuffed spicy potato mxture (Aloo Paratha) to curries like KAshmiri Dum Aloo to airfryer Baby Potatoes as a snack / side, Potato is simple, starchy and quite liked by most in the family.

  • Can I deep fry them? Yes, they do turn quite tasty, but we prefer it baked.
  • How can I amp up these wedges? Sprinkle any other spice – peri peri, Mexican, jerk, Homeamde garam masala, Tandoori, smoky BBQ — the list simply goes on
  • Can I bake with skin off? Absolutely. We loved it with the skin, so go ahead to peel the potatoes if you need to.
  • I dont have an oven, will an airfryer work? By all means, yes!! Bake time might slightly vary
  • Will these keep well?The baked wedges turn soggy after a point( best served hot!), but you can marinate ahead and freeze to bake later  . Let me know if you tried a batch.

Ingredients to make Baked Spicy Herby Potato Wedges

  • 4 Large (Firm) potatoes (or more – you can never have enough of these wedges)
  • 2 TBSP Olive  oil
  • 1 tsp crushed black pepper
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 1/2 tsp cumin powder (adjust to taste)

Method to make Baked Spicy Herby Potato Wedges

  1. Wash, scrub and cut these potatoes into equal sized thickish wedges (with skin on).
  2. Preheat oven to 165 C / 350F
  3. Rub the oil and spices together on to the potatoes. Let it stay for 5 mins to absorb the flavours.
  4. Place in a single layer on a lined baking sheet (silicon mats work best for this) and bake for 18-20 mins , flipping them twice intermittently
  5. Serve immediately with any sauce / mayo.
  6. We love them as is.
