Date Tamarind Chutney | Imli Khajur Chutney a.k.a Khatti Meethi Chutney is a popular condiment / dip that is used extensively in Chaats (Indian Street food) as well as served with snacks such as Samosa / Dhokla / Dabeli / Pakora or even kebab. While we have a stove top version of this Date Tamarind Chutney , I had to use the Instant Pot to make this fuss-free and hands-free. Another family favourite Condiment we make from scratch is this Spicy Schezwan Sauce

FAQs to make the BEST Instant Pot Dates Tamarind Chutney!!

  1. Can I skip the dates – Dates is essential to this, so dont skip. You may use Mejdool or any soft dates. But the dates have to be pitted.
  2. Can I use Tamarind powder – Dehydrated tamarind powder may be used, I haven’t used that in this recipe. But the quantity will definitely differ (as the powder is more concentrated). Use tamarind free of seeds and fibres (remove them if any before adding to the pot)
  3. I have Organic Jaggery powder, can I use it ? Jaggery powder can be used, but check for any impurities before using. I have used the Paagu Vellam (or mound jaggery a.k.a. Kesar gud locally here, shredded it simply with a sharp knife and used it)
  4. Can I use normal temperature water ? The hot water is CRITICAL in this recipe to a) soften the dates and tamarind quickly and b) letting the pressure build up quickly to avoid burn notice in the Instant Pot
  5. I don’t have Instant Pot , can I still make this ? Yes, place the ingredients in a steel bowl in the pressure cook and cook for whistles and proceed as per video below.
  6. How long will this chutney last? Under refrigeration, it easily lasts for at least a fortnight. Be sure to use a dry spoon every time. If you need it more diluted, take a few teaspoons of the chutney, add a few ice cubes, stir and use.

Ingredients to make Instant Pot Dates Tamarind Chutney

  • 125 grams Tamarind (a large lemon ball sized, seedless)
  • 125 grams Jaggery 
  • 125 grams Dates (I used 12 Mejdool dates, pitted)
  • 250 ml HOT water
  • 1 tsp Black Salt (Kala Namak) 
  • 1 tsp Dry Ginger Powder (Saunth powder)
  • 1/2 tsp Clove powder (or simply blitz 8-9 cloves in a spice grinder along with the dry ginger)
  • 1 tsp Red Chilli powder (adjust according to how tangy you need the chutney)

    I make dates tamarind chutney the same way as yours but without clove powder,next time will try adding the clove powder . I am sure it will add an extra punch.

    This is one chutney that you will always find in my freezer. I make a huge batch and freeze it. It is one chutney we cannot do without for chaat dishes. Like the idea of adding ginger powder.
