Vegan Mint Pesto – a fantastic dip / Condiment to go on / with Sphagetti , Baked Bread sticks and pretty much anything else. The husband man likes it with toasted Sourdough slices (the only kind of bread he actually eats, and that too once in a while :p) or sourdough crackers (as in the pic below) , while I love it with lightly steamed veg crudites or drizzle it over some warm soup.
Did you know that both the words pestle and pesto are derived from the verb pestare, meaning to crush or clobber. Thus pesto was born, apparently here (Italy) (according to this link).

Making pesto takes 5 mins from start to finish (unless you have to clean, prep the herbs).
So, what goes into making a great pesto?
- Fresh Herbs – Basil, Mint, Parsley (or a combo of these too). Green pea, Kale and Avocado also work great for pestos !
- Cilantro (which I personally find very flavourful, although it may not be the classic ingredient
- Good quality Olive oil
- garlic
- sometimes parmesan (vegan pesto recipe coming right up below)
- nuts (mostly pine nuts) , although some recipes call for walnuts / blanched almonds too
Let’s get to making this vegan Mint and Basil Pesto
Prep time – 5 min, Zero Cook, Made in 3 mins, Serves – 2
- 1/2 cup Mint (sorted, cleaned)
- 3-4 Basil leaves (Italian basil) – I didn’t add
- 1/4 cup Cilantro
- 1 TBSP Olive oil
- 1 tsp Lemon juice
- 2 TBSP Pumpkin Seeds
- 1 garlic pod
- 1/2 tsp salt
- 2 tsp water
How to make Vegan Mint Pesto:
- Clean and sort herbs, let them dry out a bit once are washed.
- In a food processor, add everything except the water and oil, blitz it fine
- Now add the oil and water and blitz for 5 seconds
- Vegan Mint Pesto is ready!

This is a good mint pesto for vegans. Loved the addition of basil leaves, it must be so flavoursome.
it is flavoursome, I haven’t used basil although listed in the ingredients . am sure it is flavour packed
