Cheddar, roasted garlic and Cauliflower come together in this aromatic, delicious soup – perfect for rainy or cold evenings.
One of the amazing plant-based protein sources I read up was Cauliflower. Strange as it seems, 1 cup of cauliflower has 2 grams of protein (or 1 large head upto 16 gms!). While I am no nutritionist to certify or check this, adding proteins into our vegan / vegetarian diet seems much easier with Cauliflower. And with its cousin Broccoli being a favourite, I am sure these two veggies would find more avatars at home in new dishes such as today’s yummy and hearty soup !
As a regular reader, you would know by now that my family loves all kinds of soups – and this was no exception. The sharp Cheddar cut through the texture of the soup, making it a filling mini meal with some croutons. And as for the garlic-lovers, I added an extra topping of burnt garlic (thank you, masterchef Australia for teaching me textures of food :))

Vegans – can substitute the cheddar with any vegan cheese like Cheezly or Tofutti or any you can easily make at home (Cashew butter brie or mozarella).
Cheddar and burnt Garlic Cauliflower soup
Gluten Free Soup | Course: Appetiser / Mini Meal (for kids)
Prep time : 10 mins, Cook time : 15 mins, Serves : 2~3
What you need for Roasted garlic and Cheddar Cauliflower soup:
- 100 grams Cauliflower (cut into small florets)
- 250 Unsalted Veg stock (Nothing like homemade, that we make with vegetable scraps)
- 1 bay leaf
- 1 potato (50 grams – peeled and cubed)
- 1/2 tsp pepper corns
- 4 TBSP Cheddar (about 50 grams)
- 1 cup Hot water (200 ml)
- 1 Onion (large)
- 1/2 head garlic (peeled and sliced thin)
- 2 tsp Olive Oil
- 1 tsp butter (prefer unsalted)
Topping:
Crushed black pepper and roasted garlic slices, shredded scallions (opt.)

How to make Roasted garlic and Cheddar Cauliflower soup:
- In a pressure pan / Soup pot, add oil / butter. Saute onions, half the garlic and cauliflower for 2 minutes.
- Tip in the pepper corns, bay leaf Saute.
- Add the homemade veg stock. if using store bought stock, use low-salt or adjust salt accordingly.
- Tip in the potato, saute for 1 minute.
- If using soup buillions, crush and add the buillions and top it with hot water / stock accordingly.
- Pressure cook for 1 whistle (if you don’t have a pressure cooker, simmer till the cauliflower turns really tender).
- Remove the Bayleaf and puree. Don’t strain.
- In a soup pot, add the puree, a little more water, salt and spices and bring to a gentle simmer (about 3-4 mins). Switch off
- Add grated cheddar and stir in gently till you get a slightly thickish consistency.
- Toast the rest of the garlic in a tsp of butter / oil till it turns crispy.
- Top with crushed black pepper and rest of the sliced garlic.
- Serve hot with toasted bread / croutons.
How to make this soup using Instant Pot:
- Set SAUTE MED / HIGH 10 mins.
- Saute potato, bay leaf, pepper corn,onion, potato and half the garlic till they turn aromatic.
- Tip in the Vegetable stock.
- Cancel SAUTE. Pressure HIGH for 3 Minutes.
- NPR for 3 mins, than Quick release.
- Remove the Bayleaf and puree.
- Set IP to Saute Low, adjust salt and seasonings.
- Tip in cheddar. Mix and serve with roasted garlic on top

The soup looks very creamy and that garlic on top is to die for ! We have this burnt garlic tempering in most Sindhi dishes . Perfect choice for a Protein Rich Soup .

I am not a big fan of cauliflower but don’t mind it in a soup or parathas. With burnt garlic it must be so flavourful. Going to make this soup before the winter ends.
