Muffins are everybody’s favourite. Call it snack on the go, a healthy breakfast option or simply kid’s delight, muffins are 

  • Versatile
  • Customisable (low fat / GF / vegan etc)
  • Filling 
  • healthy too with fruit puree (if you need to sneak it in)

Today’s Vegan Orange Chocochip Muffins are an inspiration from my little one’s story book where a group of children go on a picnic. Given the pandemic and its aftermath, we are only allowed to go out for picnics in our minds (or on a blog). So, why not bring in the fun, the frolic and festivities of a picnic right into our homes with these muffins that

FAQs about this Vegan Orange Chocochip Muffins

Can it be made in an oven ? 

An air fryer cuts the bake time by a bit while there’s no compromise in the taste or texture. Of course, one can always use an oven too (which has conked out at my place presently and hence the airfryer avatar)

Can I make it Gluten Free?

I haven’t tried it, but am sure almond flour / GF flours should work (with adjusting the liquid ratios of course). If you do try, leave a comment below.

Can I use egg replacer ? Or eggs in this recipe?

You can use an egg replacer altho I haven’t seen eggs in this recipe. Also, as it is vegan, eggs aren’t used. 

Can I use butter in place of Olive oil (or any neutral oil) here?

Butter generally makes bakes heavy. I haven’t tried using butter in any cupcakes. 

Can the chocochips be skipped?

You may skip them, but as this was child friendly, we topped them

Can I skip the Orange juice?

Orange and Chocolate are a pair made in heaven, and I wouldnt recommend skipping it in this recipe. Also the fresh orange juice replaces some the liquid here. So skipping the orange juice may mean adjusting the liquid ratio in the entire recipe .

Can I use sweetened orange juice?

I used fresh Orange juice, but you can use sweetened orange juice, In that case you may need to adjust the sugar added.

What is the baking time in a pre-heated oven?

Almost the same time ~17 mins or till a skewer comes clean.

Let’s get to baking these Vegan Orange Chocochip Muffins

Prep time – 15 mins, Bake time – 17 mins, Makes – 8 Muffins

What you need to make the Vegan Orange Chocochip Muffins

Dry Ingredients:

  • 1/2 cup All purpose flour
  • 1/2 cup Wholewheat flour
  • 3 tbsp Dark Cocoa powder
  • 3 TBSP Cooking Chocolate Powder
  • 1/8 tsp salt
  • 1 tsp baking soda
  • 1 TBSP Cornflour

Wet Ingredients:

  • 1/2 cup granulated sugar
  • 1/2 cup Neutral oil
  • 1 tsp Orange rind 
  • 3/4 cup Fresh Orange Juice 
  • 1/4 cup Choco Chips
  • 4 TBSP Hot water
  • 1/2 tsp Vanilla Extract

Notes

  • Baking Time may vary from oven to oven. 
  • Use may use 100% wholewheat flour (atta) or 100 % All purpose flour in the muffins
  • Granulated sugar may be replaced with Brown Sugar / Palm sugar/ Organic Jaggery powder (or as desired)
  • Keep an eye on the muffins after 14 mins. 
  • Increasing or decreasing the temperature or liquid content may lead to difference in bake quality

How to make Vegan Orange Chocochip Muffins?

  1. Sieve the dry ingredients twice over in a large bowl.
  2. In a mixer / blender jar, add all wet ingredients except hot water and chocochips and blend well.
  3. In a bowl, add the wet mixture and fold in the dry mixture in batches till there are no dry streaks left. 
  4. Preheat airfryer / oven to 160C for 5 mins.
  5. Line the muffin pans with cupcake liners.
  6. Fold in the chocochips and hot water to a desired consistency (this is almost brownie kind of texture). 
  7. Reserve a few Choco chips for topping
  8. Scoop the muffin batter into the moulds.
  9. Top with reserved Choco chips. 
  10. Bake for 15-17 mins or until a skewer comes clean.
  11. Cool on a wire rack. Serve warm or Freeze for further use. 
  12. This keeps upto a week under refrigeration (not freezer). Warm as many cupcakes you need at a time.

Dry Ingredients

  • 1/2 cup All purpose flour

    Choco Orange Cupcakes look absolutely moist and spongy. With fresh orange juice and orange rind going in, i can imagine the refreshing citrus flavors in these cupcakes.

    Chocolate and Orange definitely pair so well, in fact whenever I bake anything from breads to cookies with chocolate I cannot resist the temptation to add orange, if not the juice but at least the zest.
