What is Bombay Sandwich?

Bombay Sandwich – the image itself conjures up a plethora of emotions, textures and flavours for those having lived here and / or partaken of the Bombay Sandwich. While Cheese sandwich, Noodles sandwich, Schezwan sandwich and a zillion other sandwiches may come and go, the BOMBAY Sandwich is something that is dear to the heart. 

Till I moved to the Maximum City, Sandwich was more a weekend affair at home with basic cucumber – tomato sandwiches made on lazy / busy Sundays when mom used to bring home a cartload of answer sheets to correct and had no time to  make a propah South Indian brekkie. Buttered toast with jam / ketchup was more a snack on the go, and the trusted old sandwich toaster (remember that contraption which the Mumbai sandwich wala still uses), was used by aunts who came visiting from out of city/ country and their kids didn’t eat much “Indian” stuff.

Ahem, the Sandwich Masala powder. Bombay Sandwich masala is a quick and handy spice powder that can be used to make street style sandwiches. It can also be used to top Chaats / Indian style salads.

Of course, along with the ubiquitous Green Sandwich Chutney, this Masala powder was standard across sandwiches in Mumbai. Many homes made it from scratch while some others used store bought. Whatever be the reason, the sandwich masala along with a liberal dose of butter (and the multitude of veggies, of course) was the hallmark of a green Mumbai Sandwich – Street Style.

  1. Roast the spices on low flame till aromatic .
  2. Cool thoroughly before grinding 
  3. Grind to smooth powder, sieve if needed and use
  4. Make small quantities for maximum freshness.

Let’s get to making the quick and handy Bombay Sandwich masala 

Prep time – 5 mins, Cook time – 5 mins, Yields – approx. 50 grams of the sandwich masala 

Cuisine – Indian, Course – Condiment / DIY spice powder 

Ingredients you need to make Bombay Sandwich Masala Spice Powder:

  • 2 TBSP Cumin (jeera/जीरा)
  • 1 tsp Pepper Corns (Kali Mirch/काली मिर्च) 
  • 1 TBSP Cloves (Laung/लौंग)
  • 1 tsp Caraway seeds (Shah jeera/शाहजीरा) 
  • 1 tsp Fennel seeds (saunf/सौंफ)
  • 1/2 tsp Pomegranate seeds (Anaardana/अनारदाना)
  • 1 inch cinnamon  (Dalcheeni/दालचीनी)
  • 2 Star anise (chakri phool/चक्रफूल)

Toppings: 

  • 1/2 tsp Salt (Namak/नमक)
  • 1.5 TBSP Dry Mango Powder (Amchur/अमचूर)
  • 1.5 tsp Black Salt (Kala Namak/कालानमक)

How to make :

  1. Dry roast the ingredients (except toppings) on a low flame till aromatic.
  2. Cool and grind once.
  3. Then add the toppings , grind again to  fine powder texture 
  4. Cool, and store in an airtight container.
  5. Use on sandwiches as needed.  
  6. If the quantity is more, sieve the ground mixture once before storing. But highly recommend you to make it in small batches.

  • 1 Spice Grinder
  • 1 Ladle
  • 1 Glass Jar

Ingredients
  

  • 2 TBSP Cumin jeera
