Vegan Pad Thai is a quick to make Asian-style Dinner in under 20 mins. Totally customisable with protein of choice, it is a delicious meal that your family will surely love.
Why Pad Thai ?
Pad Thai is a crowd favourite and sooo customisable too with protein options. We love Asian food at home, especially on weekends or lazy Sundays, and this is a kids’ favourite too, so documenting it here was paramount.
Of course, there are a zillion add-ons to this, with sauteed Tofu that can be added for protein. We kept this quick, simple and kid-friendly too. In recent times, I have had the best Vegan Pad Thai at Hyatt Place, Kochi (Cochin, India) and the memory of their Som Tam Noodles (Raw Papaya Salad) still tickles my tastebuds. That Som Tam is coming up soon enough 🙂
Thai cuisine is so loved at home with Thai Mango Yellow Curry being a hot favourite followed by Thai Coconut SoupMostly made with Flat noodles, I made with flat Rice Noodles for a Gluten Free version. I have had this with Udon Noodles too, but I prefer a quick stir fry with Udon noodles.

What you need to make Vegan Pad Thai
Cuisine – Asian Veg; Course – Mains ; Spice level – Medium
- 100g Rice Noodles (preferred flat type)
- 2 TBSP sesame oil
- 1 Onion (sliced, medium)
- 1 tsp garlic (minced)
- 1/2 tsp ginger (minced)
- 1/2 cup veggies of choice (one can use French beans, carrots, broccoli, bok choy)
- 2 tsp Peanuts (roasted, and slightly crushed)
- 1 tsp Spring Onion Greens
- 1 lemon (cut into wedges, to serve)
- 1 tsp Roasted Sesame seeds
Secret Sauce :
- 2 TBSP Soya Sauce (low sodium)
- 1 tsp Rice Vinegar
- 2 TBSP Maple syrup
- 1/2 tsp Sriracha / Hot sauce
- 1 tsp Lemon juice

How to make Vegan Pad Thai:
- Cook Noodles according to packet instructions. Drain
- Mix all the ingredients for the sauce mentioned above and keep aside.
- In a pan /wok, heat sesame oil. Saute onions, garlic, ginger on high heat.
- Now add the blanched veggies of your choice.
- Now add the sauce and drained noodles
- Finish with Spring Onion Greens and a dash of lemon
- Top with crushed roasted peanuts, roasted sesame and serve immediately.
