While watermelons are generally red (at least from what I have seen), this yellow watermelon was a delight and a feast to all the senses – juicy, sweeter-than-sugar-sweet and completely hydroponically grown..The kids could hardly believe it was watermelon in that colour.

    • Green cucumber (cut into small bites)
    • Chaat masala
    • Shredded mint
    • Salt to taste
    • Red chilli flakes (opt.)

    There is no defined quantity / ratio of ingredients. Play with the ingredients or add some more What else would you add ? (I am thinking chickpeas or any plant protein to make this a heavy meal by itself)

    • 2 cups Watermelon (cubed and kept chilled)
    • 1 cup Cucumber (cubed with skin on, chilled)
    • 1/8 tsp salt
    • 1/4 tsp Red Chilli Flakes
    • 1/2 tsp Chaat Masala
    • 1 tbsp Fresh Mint leaves finely chopped
    • 1 tsp Lemon Juice (optional)

        I love the two ingredients you have used – cucumber and melon to create a salsa. It sounds tasty and cooling too. I have just discovered the chaat masala flavours and can’t wait to try your recipe.

        Looks soooo colourful and pretty! With chaat masala, red chilli flakes and lemon juice going in, I can imagine how flavourful this salsa would be. This is the only way I like eating watermelon, and now you’ve tempted me enough to make some of this beautiful salsa for myself. ????

        Wow Kalyani, you get yellow watermelon in Mumbai! I enjoyed it for the first time in Bali. Its so common there along with the red one. What a delicious and refreshing watermelon cucumber salsa. Perfect as a side with any Mexican food or even on its own.
