Vegan udon stir-fry is a flavorful plant-based noodle dish with fresh vegetables, a spicy umami sauce and is perfect for a quick and healthy meal.

In our endeavor to feature Asian Veg cuisine frequently at home, I made this especially for the not-so-noodle-loving elder kid at home and she surprised me by going for the second helping 🙂 it’s another matter that her bestie was at home that day for lunch so perhaps she didn’t want to create a fuss. But this is a real good vegetarian stir fry that’s a rage in most Asian countries, where eating-on-the-go is a given and ramen bowls and soups and noodle stir fries like these are very much part of the street food culture.

Thai was the first Asian Cuisine we tried out of our comfort zone, followed by Korean. Indo-Chinese isn’t even a legit cuisine (lol),and mostly adapted to the Indian palate by the street hawkers across India.Although that ranks as one of the popular choices for the kids at home. Mexican of course is a hot fav at home (except when you consider the HUGE prep time, and stuff gone in seconds :-))

How can I customise this Stir Fry to our palate ?

The good thing Is this noodle stir fry is as customizable as you need it to be -vegan, gluten free, soy free, kosher, with eggs, without eggs, or even add a bit of any protein like shredded soya chunks , tossed Tofu to make it a filling meal.The only thing I would recommend strongly not to sub is the Sambal Oelek —a spicy(?) red chilli paste that’s so typical of these stir fries.

If you want this stir fry 100% Gluten Free , try subbing the Udon Noodles with Soba Noodles or Buckwheat noodles (or any Gluten Free substitute)

And I am glad I used store bought coz considering the popularity of these noodles vanishing from the bowl, I am sure this condiment would be used again. But if you don’t have access to this, any spicy Asian chilly paste including sriracha etc may be used but the taste will definitely vary.

Let’s get to make this quick to make under-20 minutes meal. you may simply halve / double / triple the recipe. Mine is moderately spiced, you may spice it up as required.

I used dry Udon noodles so needed a little more time to cook. If you are using Soft Udon Noodles, you just need to soak them in water prior to cooking, drain and use as per packet instructions.

Ingredients for Spicy Udon Stir fry:

Prep time – 10 mins, cook time – 10 mins , serves – 2

Cuisine : Asian Veg, Course: Main Course / Lunch / Brunch

  • 100 gram Udon Noodles (dry) 
  • 2 tsp Sesame oil
  • 1 onions (medium, chopped)
  • 1 tsp Minced garlic
  • 1/2 tsp ginger (minced)
  • 1 tsp Salt (or to taste, check and add as you are using a sauce)
  • 1 cup Chopped veggies (I used cabbage, juilenned carrots, broccoli)
  • Sauce :
  • 2 tsp Sambal Oelek (or to taste)
  • 1/2 tbsp Vinegar
  • 1 TBSP Brown sugar
  • 1/2 tsp Fresh chillies (optional)
  • 2 TBSP Sesame oil
  • topping:
  • 1 tsp Roasted sesame seeds
  • 2 tsp Spring onion greens (chopped)

How to make Spicy Udon Stir fry

  1. Cook noodle as per pack instructions. 
  2. Drain and keep aside. 
  3. Mix all ingredients for sauce and keep ready.
  4. In a wok, heat oil to smoking temperature, add the onions, garlic ginger, veggies and saute till onion lightly caramelises and veggies are al dente. 
  5. Do this on a high flame to get a slightly charred, yet pleasant aroma from the veggies.
  6. Now add the sauce, boiled noodles . toss again on high flame.
  7. Serve immediately with the toppings.

Ingredients
  

  • 100 gram Udon Noodles dry
  • 2 tsp Sesame oil
  • 1 onions medium, chopped
  • 1 tsp Minced garlic
  • 1/2 tsp ginger minced
  • 1 tsp Salt or to taste, check and add as you are using a sauce
  • 1 cup Chopped veggies I used cabbage, juilenned carrots, broccoli

Sauce mix

  • 2 tsp Sambal Oelek or to taste

    Made udon noodles your style and we loved it. So easy to make. As I didn’t have sambal oelek, I used Schezwan chilli paste. Added bell pepper and mushrooms too.
