Tomato Omelette – Vegan & Gluten Free | Cooking for One | Easy Breakfast

What is Tomato Omelette ? It is a quick to make Gluten Free, egg free, Vegan Savoury Pancake or Crepe made with Tomato, gramflour and spices. It is served as a snack / breakfast or sometimes for a light dinner too.

Cooking for one can alway be tricky – too less and hunger lingers on, and too much one will be overwhelmed with leftovers… One often repeated dish under Bachelor Cooking / Cooking for one is Tomato Omelette. Till many years ago, I always thought Omelette meant making them with eggs, and when I saw it on my elder kid’s school lunch menu. A few searches and I was ready to make them. 

This is a great breakfast / snack or even a filling dinner , especially when one is pressed for time – requires very little time and ingredients. So, a filling vegan & Gluten free breakfast is taken care of with this yummy and tasty Tomato Omelette. With a little prep, it can be dished out in less than 15 minutes if cooking for oneself . Tips and Tricks to make the BEST Tomato Omelette

  1. I don’t eat Besan, How can I customise this Tomato Omelette? If you don’t Besan, sub it with a mixture of Wholewheat flour, rice flour and some Millet flour. Of course, it won’t be Gluten free then.
  2. Can I skip Onion in this? Yes, definitely. One can substitute it with grated cabbage / carrot. 
  3. Can I skip Tomato ketchup ? That is the key to this Omelette, please don’t skip this.  
  4. Can I add curd / yogurt to the batter? This batter is entirely vegan, but if you prefer you can add 4-5 TBSP curd / buttermilk and reduce the water proportionately.

Ingredients to make Tomato Omelette:

  • Besan / gram flour – 1/2 cup
  • Rice flour / Millet flour – 1/4 cup
  • Water – less than 1/4 cup
  • Onion – 1 minced fine
  • Tomato Ketchup/ sauce – 2 TBSP (optional, but recommended)
  • Ginger – grated – 1/2 tsp (optional)
  • Tomato – 1 minced fine (deseed and chop)
  • Coriander leaves, curry leaves – a handful (chopped fine)
  • Green chillies – 2 nos (or 1/2 tsp red chilli powder)
  • Turmeric powder – a dash
  • Salt – to taste
  • Garam Masala powder – 1 tsp
  • Oil – to fry the Omelette (approx 1/2 tsp per Omelette)


 Method to make Tomato Omelette:

  1. Sieve the flours. Add salt and all dry spices. 
  2. Then add all ingredients (except oil) one by one, to a thickish but flowing batter. 
  3. Rest batter or 15 mins. 
  4. Grease a tava and heat to medium heat.
  5. Take a small ladle of the batter and spread it like a pancake. Drizzle oil around and a few drops on the pancake.
  6. After 2-3 mins, flip it and roast on the other side. Use oil again if required.
  7. Once done, serve it with toasted bread, sauce and coffee.  Or as is with some green chutney

Ingredients
  

  • 1/2 cup gram flour BESAN / Kadalamaavu
  • 1/4 Rice flour sub with any millet flour
  • 1/2 cup Water adjust
  • 1 Onion minced fine

    Hey, this is really a good one! We call them chilla (pancakes) but have never used tomato ketchup. The flour options are informative. I am quite eager to try out this recipe. The superb images justify the recipe.

    I often make tomato omlette but I add tomato. Adding tomato ketchup seems to be a good option, will try it next time.

    Tomato Omlettes are Anna’s fav and I make it for him quite often . The same as yours but sans OnG . He loves to have it with green chutney and toasted bread .
