What is Adai ?

Adai is a thicker dosa (lentil crepe) that is a mainstay at many South Indian homes. It is made with a mix of lentils and grains, and mostly made immediately after grinding (without fermentation).

Tips to make a delicious adai:

  1. Soak rice + lentils for only the time indicated in the recipe
  2. Grind the batter slightly coarse to give it a characteristic texture to the adai (some people like to grind it smooth) 
  3. If using brown rice / other varieties, the soak time might increase by an hour.
  4. Most adai are made immediately after grinding, but we prefer to ferment it for at least an hour to help the lentils digest better
  5. Adai is spicy on its own with red chillies / green chillies / ginger added to it while soaking / grinding, so an adai is simply served with some molgapudi (gun powder) and jaggery. (Some prefer butter) . It tastes great on its own too without any accompaniments
  6. Adai remains soft even after making them, so perfect for lunch boxes. 
  7. Temperature of the tava / skillet is important as lentil batter burns quickly. Make them on moderate heat
  8. If not gluten friendly, use asafoetida to prevent flatulence from the lentil batter.

  • 2 cups Brown Rice ( I have used Organic Sona Masoori Semi Brown Rice)
  • 1/2 cup split black lentil (Urad dal / Ulundhu/ Ulutham Paruppu) 
  • 1/2 cup split pigeon pea (Toor Dal / Thuvaram Paruppu)
  • 1/3 cup  split Green gram (Yellow Moong dal / Pasi Paruppu)
  • 2 tsp Fenugreek seeds (methi / Vendhyam – dried or soaked )
  • 6 dry Red chillies
  • 2 Kashmiri Red chillies
  • 1 tsp Turmeric
  • 1 sprig Curry leaves
  • 1 tsp Salt 
  • 1 tsp Oil (per adai)

    Brown rice adai looks good and healthy. The best part of adai I like is it can be made instantly unlike dosa.

    Adai is so tempting with chutney and podi on the side. I used only 1 cup brown basmati rice and it turned out good. It didn’t look as crisps as yours but we loved.
