This dish with an ultra short prep time and the flavour of butter is a great crowd pleaser and even the picky broccoli eaters at home liked the nuttiness from the veggie .The husband and the elder kid (the anti-broccoli team :p) actually asked for seconds which is when I felt I had made too little a portion! The little one at home – a true blue broccoli lover (like me) wiped her bowl clean 🙂

The little one was happy but personally having got used to moderately spicy food, this was quite bland by itself (just as veg fried rice is ) and would do well with a side of spicy gravy or spicy sauce based stir fried veggies / tofu

Walnut broccoli Rice – GF One Pot meal, can be vegan too !

Prep time– 10 mins, Cook time– 10 mins. Serves– 2

What you need to make Walnut Broccoli Rice:

  • 2/3 cup Basmati Rice (Cooked) 
  • 2 tsp Butter   I used olive oil and butter in equal ratio) 
  • 1/2 cup Broccoli (blanched and drained)
  • 1/2 tsp Garlic powder (I used finely minced fresh garlic 1 tsp)
  • 1 Onion (medium- white onions are preferred) 
  • 1 tbsp Sesame seeds  
  • 1 tsp Soy sauce (you can opt out this and make it soy free, like I did)
  • 1/4 cup Walnuts (chopped medium) 
  • 1 tsp Salt
  • 1/2 tsp pepper (cracked) 

FAQs to make this Walnut Broccoli Rice

  1. Can I use cooked brown rice instead of White Basmati ? Absolutely, yes. You can also use cauliflower or couscous for a variation. Just ensure the rice / couscous is cooked fluffy and is not mushy
  2. CAn I skip the butter entirely ? Yes, we can use Olive Oil / Canola Oil entirely. No worries
  3. We are allergic to Walnuts / nuts. Can they be skipped ? Technically this is a broccoli – walnut rice. But yes if allergic, go ahead and top with toasted pumpkin or melon seeds for that crunch

How to make Walnut Broccoli Rice:

  1. In a pan, add butter+ oil.
  2. If vegan, simply use only oil
  3. Sauté the garlic and onion till translucent. 
  4. Meanwhile dry roast walnuts till slightly warm
  5. Now splutter the sesame and broccoli florets . 
  6. Toss a pinch of salt and saute for 2-3 mins till slightly crunchy.  
  7. Now add the cooked rice, soya sauce, salt, pepper and toss well. 
  8. Tip in the tossed broccoli and serve immediately topped with the roasted walnut.

    The walnut rice sounds very interesting , I am not a broccoli lover but I can make out the flavours of this rice . Walnuts surely will give it a super flavour , and teams very well with broccoli . Great share .

    I guess kids enjoy this rice with simple flavors more than the khichdi. The rice sounds healthy, and walnuts and sesame seeds add a lovely crunch to the dish.

    Same here, Kalyani. The kids run away at the mention of khichdi. But this broccoli would be welcome. Somehow my little one loves such simple flavors.

    Any dish that is new and not repeated would go well with kids. I personally like the flavour of broccoli. Adding walnuts would add a nice crunch and nutty flavour to the rice. And it is so colourful too.

    I too have anti-broccoli team (both the kids) and have to find ways to feed broccoli to them as I and hubby love it. I also made walnut rice for the day but a different one with cranberries. This looks delicious and will make it soon.
