Broccoli Veg Pulav | Vegan and GF dishes

My little one adores Broccoli and Pulav in all forms. So, one Sunday she asked very specifically for this pulav. Although I have made veg pulav in so many different variations, this dish made it very special as my little chef helped me dice the veggies (except the onions and garlic of course). 



Her little hands were all over the kitchen and I am so amazed that she’s grown up so fast, so soon I can see her as my sous chef frequently. She also loves to cook a mean salad (that will feature shortly) and as I see her poring over cookbooks and Amar Chitra Katha story books with equal gusto, I can only imagine how wonderful our lives can get as the kids grow up and take charge and I sacredly cherish these little blessings 🙂



This is a mildly spiced Pulav made specially for the kids , so you can choose to spice it up if serving to adults.

Prep time – 20 mins, cook time – 20 mins, Serves – 2~3



You need:

Long grained basmati rice – 1 cup (240 ml)

Whole spices – Cinnamon 1/2 inch, star anise, 2 bay leaves, 2 cloves, 1 green cardamom

Salt – to taste

Oil – 2 tsp

Garam Masala – 1 tsp

Veggies : Broccoli, Peas, Carrot – 1 cup in all

To grind : 1 medium onion + 4 garlic cloves

How to:

Wash and soak rice for 15 mins, meanwhile chop all veggies.

In a blender, grind onions and garlic to a smooth paste.

Microwave veggies with a hint of salt for 6 mins till al dente.

Similarly microwave drained rice with the whole spices till done and fluffy.

In a pan, heat oil (or ghee+oil combo), saute the onion-garlic paste till nice and fragrant, add a tsp of garam masala, 1-2 TBSP of water and the veggies. Saute well for 1 min. Add the cooked rice and gently stir in the masalas. Serve hot with Onion-Cucumber Raita
