Ingredients
  

  • 1/2 cup Finger millet ragi flour
  • 1/4 cup Little millet flour
  • 1/4 cup Foxtail millet flour
  • 1 1/3 cup Wholewheat flour if Gluten Free, sub with any other GF flour, but the bake time and liquid will vary quite a bit
  • 1 tsp Cornflour
  • 1 tsp Baking powder
  • 1/2 tsp Cinnamon powder Sub with All spice powder
  • 1/2 tsp Baking soda
  • 1/8 tsp Salt
  • 1/2 tsp Nutmeg powder
  • 1/2 tsp Clove powder if using all spice powder, omit nutmeg and clove powders
  • 1 cup Mixed nuts chopped I used cashew, almonds, black raisins and pistachio
  • 15 Dates I used Mejdool de-seeded chopped dates, increase by 4-5 if you want it sweeter
  • 1.5 cups Fresh orange juice this will increase if using any GF flour in place of Wholewheat / APF
  • 1/2 cup Olive oil or any neutral oil like avocado / Canola
  • 1/2 cup Hot water
  • 1/4 Tutti fruiti candied papaya - optional but recommended .
  • 1.5 TBSP Orange zest

Instructions
 

  • In a pan, bring the hot water to a rolling boil , add chopped dates and let it boil for 4-5 mins till dates are soft but not mushy. Cool slightly and Add the baking soda to this mixture and mix, it will froth a bit, but that’s ok. Let it settle down
  • Meanwhile, In another bowl, soak the finely chopped dry fruits in room temperatures orange juice for 20 mins.
  • Sift the dry ingredients twice over in a large bowl.
  • Preheat oven to 170C and grease a baking dish (I used a Bundt pan)
  • In another large bowl, add all the soaked dates, oil, soaked dry fruits, Orange Zest + juice well. Add this wet mixture to the dry mix and slowly fold till no dry streaks appear. Add a little more hot water 1/2 tsp at a time or pure orange juice if the mixture appears too dry. Add in the tutti frutti if using .
  • Pour the cake batter to the prepared cake pan, bake for 30-35 mins or till a skewer comes clean.Tent the pan if you feel it’s browning too quickly.
  • Cool on a wire rack and de-mould gently. Let it cool to room temperature and slice as required.

Notes

Tips to make the BEST, MOIST AND Soft Millet Xmas / Plum CAke:
  1. Ensure all ingredients are at room temperature
  2. Whisk / Sieve the flours throuhgly before mixing
  3. As with all cakes, fold in the dry mixture to the wet slowly. do not overbeat
  4. This is a 90% millet recipe with wholewheat flour. Any variation of flours (including making it 100% wholewheat or APF or any ratio change will vary the bake time, liquid content - adjust accordingly)
  5. Baking times vary from oven  to oven and even oven to airfryer. Tent the bake / cake if it burns too quickly
  6. Cool on the wire rack and then slice. Best sliced with overnight refrigeration
  7. If you are allergic / dislike nuts, you can skip or use what works for you (suggestions include candied orange slices, dehydrated fruits etc)
  8. This is a 100% Eggless recipe- if using eggs, the ratio of dry : wet ingredients will vary.
