Tomato Omelette is a quick to make Gluten Free, egg free, Vegan Savoury Pancake or Crepe made with Tomato, gramflour and spices.

Ingredients
  

  • 1/2 cup gram flour BESAN / Kadalamaavu
  • 1/4 Rice flour sub with any millet flour
  • 1/2 cup Water adjust
  • 1 Onion minced fine
  • 2 TBSP Tomato Ketchup/ sauce optional, but recommended
  • 1/2 tsp Ginger - grated
  • 1 Tomato minced fine ,deseed and chop
  • 1 tsp Coriander leaves chopped fine
  • 1 sprig curry leaves chopped fine
  • 2 Green chillies or 1/2 tsp red chilli powder
  • 1/4 tsp Turmeric powder
  • 1 tsp Salt
  • 1 tsp Garam Masala powder
  • 1/2 tsp Oil per omelette

Instructions
 

  • Sieve the flours. Add salt and all dry spices.
  • Then add all ingredients (except oil) one by one, to a thickish but flowing batter.
  • Rest batter or 15 mins.
  • Grease a tava and heat to medium heat.
  • Take a small ladle of the batter and spread it like a pancake. Drizzle oil around and a few drops on the pancake.
  • After 2-3 mins, flip it and roast on the other side. Use oil again if required.
  • Once done, serve it with toasted bread, sauce and coffee. Or as is with some green chutney
