Tomato Omelette is a quick to make Gluten Free, egg free, Vegan Savoury Pancake or Crepe made with Tomato, gramflour and spices.

- 1/2 cup gram flour BESAN / Kadalamaavu
- 1/4 Rice flour sub with any millet flour
- 1/2 cup Water adjust
- 1 Onion minced fine
- 2 TBSP Tomato Ketchup/ sauce optional, but recommended
- 1/2 tsp Ginger - grated
- 1 Tomato minced fine ,deseed and chop
- 1 tsp Coriander leaves chopped fine
- 1 sprig curry leaves chopped fine
- 2 Green chillies or 1/2 tsp red chilli powder
- 1/4 tsp Turmeric powder
- 1 tsp Salt
- 1 tsp Garam Masala powder
- 1/2 tsp Oil per omelette
Sieve the flours. Add salt and all dry spices.
Then add all ingredients (except oil) one by one, to a thickish but flowing batter.
Rest batter or 15 mins.
Grease a tava and heat to medium heat.
Take a small ladle of the batter and spread it like a pancake. Drizzle oil around and a few drops on the pancake.
After 2-3 mins, flip it and roast on the other side. Use oil again if required.
Once done, serve it with toasted bread, sauce and coffee. Or as is with some green chutney
