Ingredients
  

  • 2 Pineapple peeled and sliced
  • 1/2 Onions minced
  • 1/4 cup Bell Peppers optional, I didn't add
  • 1/4 cup Cucumbers cubed fine
  • 1/2 cup Tomatoes deseeded and diced
  • 2 Tbsp Fresh Mint leaves finely chopped

Dressing

  • 1/4 tsp Chaat Masala
  • 1/4 tsp salt
  • 2 tsp Lemon Juice
  • 1/4 tsp Chopped green chillies

Instructions
 

  • Heat a grill pan, roast the pineapple slices on both sides on medium heat till slightly charred and a smoky aroma wafts. Takes about 5-7 mins.
  • Pro Tip : Once you place the pineapples on the pan, lightly salt it on both sides so the juices begin to release and they caramelise faster
  • You can also use an air fryer / oven to grill the pineapples before mincing them
  • Rest these slices for 2 mins and then chop it into bite sized chunks (see notes for details)
  • In a large bowl, add the roasted pineapple chunks, red onions, diced tomatoes,Cucumbers and peppers.
  • Whisk together the dressing in a small bowl.
  • Add the dressing to the salsa and mix well.
  • Finish with shredded mint and serve immediately as is or with some nachos

Notes

Tips to make the freshest Roasted Pineapple salsa
  1. Use the sweetest pineapple you can find.
  2. Grill on medium flame slowly till char marks appear and the pineapples turn aromatic.
  3. Rest for 2-3 mins before mincing
  4. Mix all ingredients and chill ahead of serving. Add dressing just before serving and serve immediately.
  5. You can add minced jalapenos in place of green chillies if preferred.
