In a soup pot / small pressure cooker, add the oil & saute onions till translucent, now add the salt, veggies and sauté for 3~4 mins.
Add the veg stock or hot water and let it come to a rolling boil Pressure cook for 1 whistle (or cook in a soup pot) till the veggies are tender and al dente only.
Now add the minced coriander, fresh ground pepper. Let it simmer for 3-4 mins
Add the spring onion greens, lemon juice and switch off.
Enjoy it hot or warm.

Tips and Tricks to make the best Lemon-Coriander Soup:
use homemade Veg broth / stock for best results. click for the homemade (NO SODIUM version) here
If using soup bullions, adjust the salt accordingly
Garlic is optional, so add if you prefer.
Some recipes add steamed sweet corn and cornflour too, that's totally optional
All veggies here are to be minced and sauteed well.
If using PRessure cooker, give it only one whistle. Release quickly
If using Instant Pot, HIGH for 3-4 mins, Quick release.
The veggies have to just be al dente, not mushy.
Add shredded tofu / chicken / fish to add any protein. Some add minced paneer, but we prefer this as is.
Just before serving, add lemo juice and serve immediately.
