Halve the onions and finely slice them lengthwise. Similarly finely shred the cabbage
Addition of Cabbage is completely optional but we love the combo.
Add the salt and leave for 5 mins, then add the spices, salt, besan and rice flour.
Rub the onion and cabbage into the mixed flours and mix the spices thoroughly.
Meanwhile heat the oven to 200 C (375F)
Add half the oil and rub it into the mixture.
On a baking tray, take small portions of this mixture and place them on the lined tray.
Spray the rest of the oil and bake for 15-18 mins, tossing them midway, till crisp.
Serve immediately

Adding the salt (throw in a few bell peppers too for some crunch) just before mixing and bakingCan leftovers be heated ? we hardly have leftovers, but if you, just re-heat using oven / airfryer and it turns slightly crispy. Microwave might work to "heat" up the pakora may not crisp it enough.
