Ingredients
  

  • 300 grams Onions i used the red, Indian variety
  • 100 grams Cabbage
  • 1 cup Besan / Gramflour sifted
  • 2 TBSP Rice flour
  • 1.25 tsp Salt or to taste
  • 1/2 tsp Crushed Ajwain carrom seeds
  • 1 tsp coriander seeds crushed
  • 1/2 tsp Saunf fennel seeds
  • 1 tsp Red chilli powder adjust spice
  • 5 TBSP Oil divided use

Instructions
 

  • Halve the onions and finely slice them lengthwise. Similarly finely shred the cabbage
  • Addition of Cabbage is completely optional but we love the combo.
  • Add the salt and leave for 5 mins, then add the spices, salt, besan and rice flour.
  • Rub the onion and cabbage into the mixed flours and mix the spices thoroughly.
  • Meanwhile heat the oven to 200 C (375F)
  • Add half the oil and rub it into the mixture.
  • On a baking tray, take small portions of this mixture and place them on the lined tray.
  • Spray the rest of the oil and bake for 15-18 mins, tossing them midway, till crisp.
  • Serve immediately

Tips for the perfect BAKED Onion Pakora

Does it taste as crunchy ? Almost (the deep fry makes it crunchy, but we are not frying, right?)
Is it as tasty? yes, definitely. You may miss the crunch of the deep fried pakoras, but this is every bit as tasty
Is it healthy ? Absolutely. We even have experimented with adding more veggies
Airfryer or Oven ? The first time I made this recipe in 2017, it was in the oven, but since 2-3 years, I make it in the Airfryer. Baking time might slightly cary, but airfryer gives. me more flexibility that I can pull out the tray and see for the right crispyness and adjust the bake time.
Can this be made ahead ? Part of it, yes. Don't add any water or salt and make the dry mix ready. Adding the salt (throw in a few bell peppers too for some crunch) just before mixing and baking
Can leftovers be heated ? we hardly have leftovers, but if you, just re-heat using oven / airfryer and it turns slightly crispy. Microwave might work to "heat" up the pakora may not crisp it enough. I usually use-up leftovers in Kadhi Pakodi - another delicacy my kids love.
If that tempts you, just keep aside 20 mins to make this quick tea time (actually, anytime snack!)
