Equipment

Ingredients
  

  • 100 gram Udon Noodles dry
  • 2 tsp Sesame oil
  • 1 onions medium, chopped
  • 1 tsp Minced garlic
  • 1/2 tsp ginger minced
  • 1 tsp Salt or to taste, check and add as you are using a sauce
  • 1 cup Chopped veggies I used cabbage, juilenned carrots, broccoli

Sauce mix

  • 2 tsp Sambal Oelek or to taste
  • 1/2 tbsp Vinegar
  • 1 TBSP Brown sugar
  • 1/2 tsp Fresh chillies optional
  • 2 TBSP Sesame oil

Topping / Garnish:

  • 1 tsp Roasted sesame seeds
  • 2 tsp Spring onion greens chopped

Instructions
 

  • Cook noodle as per pack instructions.
  • Drain and keep aside.
  • Mix all ingredients for sauce and keep ready.
  • In a wok, heat oil to smoking temperature, add the onions, garlic ginger, veggies and saute till onion lightly caramelises and veggies are al dente.
  • Do this on a high flame to get a slightly charred, yet pleasant aroma from the veggies.
  • Now add the sauce, boiled noodles . toss again on high flame.
  • Serve immediately with the toppings.
