Ingredients
  

  • 200 grams Sweet Potato fresh and unblemished
  • 200 grams Curd click video below to see how to make homemade curd/ dahi
  • 1 tsp salt
  • 1 tsp roasted cumin powder
  • 1/2 tsp Red Chilli powder

Tempering

  • 1 tsp grated ginger
  • 1 tsp chopped green chillies
  • 1/2 tsp oil
  • 1 tsp mustard seeds
  • 1 Dry red chilly
  • 1 tsp coriander chopped

Instructions
 

  • Wash and scrub the sweet potato well.
  • Pressure cook / steam whole Sweet Potato with the skin on till soft, but not mushy (you can use Instant Pot or Pressure cooker)
  • Once done, peel the skin (we sometimes like the leave the skin on) and cut into small cubes
  • Alternatively, peel and lightly crumble them with a potato masher or with a fork. Do NOT mash them.
  • In a tempering pan, add oil, splutter mustard seeds, ginger, green chillies, broken dry red chillies, curry leaves till. mustard seeds splutter. Switch off stove, and add the coriander leaves. Set aside with a tsp of water added to this.
  • In a serving bowl, Whisk curd / yogurt with a pinch of salt free of any lumps. Add the steamed and crumbled sweet potato into it and mix GENTLY.
  • Pour the tempering on top, along with the red chilli powder and roasted cumin powder.
  • Serve chilled with any spicy pulav / biryani. We love to eat this as is.

Notes

For vegans, you can easily sub with peanut curd or cashew curd to get similar results
