Vegan mint pesto

A delicious pesto (dip) made with mint leaves and herbs. This recipe is Gluten Free, Vegan and Nut Free as well

- 1/2 cup Mint sorted, cleaned
- 3-4 Basil leaves Italian basil
- 1/4 cup Cilantro
- 1 TBSP Olive oil
- 1 tsp Lemon juice
- 2 TBSP Pumpkin Seeds
- 1 garlic pod
- 1/2 tsp salt
- 2 tsp water
Clean and sort herbs, let them dry out a bit once are washed.
In a food processor, add everything except the water and oil, blitz it fine
Now add the oil and water and blitz for 5 seconds
Vegan Mint Pesto is ready!
