Grilled Corn Mango Salsa

A fresh Summery Salsa with Grilled Corn and Semi Ripe Mango

- 1 cup Corn dehusked
- 1/2 cup Mango diced
- 1/4 cup Onion minced
- 1/4 cup Tomatoes minced
- 1/2 tsp Olive Oil
- 1/2 tsp salt
- 1/4 tsp Chilli Flakes
- 1/2 tsp Black Pepper optional
- 1 tbsp Fresh Mint leaves minced fine
- 1 tsp Green chilly optional
- 1/2 tsp Lemon Juice
Microwave or steam the corn kernels till soft. Drain and reserve.
In a grill pan, add the olive oil. Brush evenly to coat the entire grill pan.
Add half of the onions and saute.
Add the steamed corn and saute for 4-5 mins on medium heat.
Transfer this to a bowl.
Now add the rest of the ingredients except salt.
Chill for 15 mins
Add salt just before serving and serve immediately.
