Ingredients
  

  • 1/2 cup Quinoa Cooked
  • 2 cups Watermelon cubed

For the vinaigrette : 

  • 1/2 TBSP Lemon Juice
  • 1/2 tsp Honey maple syrup if you need it completely vegan
  • 1/4 tsp Red Chilli Flakes
  • 1/4 tsp salt
  • 1/3 tsp Whole Black Pepper Crushed
  • 1/2 cup Fresh Orange Juice

Instructions
 

  • Rinse the quinoa well and cook in open pot till it 'blooms'. Drain and reserve in a colander
  • Mix the quinoa and watermelon with a fork and chill for 15- 30 mins.
  • Before serving, whisk all ingredients of the vinaigrette, toss the salad with the same & serve immediately, chilled.

Notes

NOTES:
  1. One can skip honey for a completely vegan version. Sometimes we don't add either honey or maple syurp as the watermelon is itself sweet. 
  2. Ingredients for the Vinaigrette is optional, go with what catches your fancy.
  3. This was moderately spicy for us, but you could add or delete any ingredient of your choice.
