Thai Coconut Veg Noodle Soup

Thai Coconut Veg Noodle Soup is a delicious Gluten Free and Vegan one-pot-meal kind of soup with noodles and veggies simmered in an aromatic coconut milk broth.

As the readers of this blog would know by now, we are huge fans of soup. While we have our personal favourites, we also love to experiment quite a bit when it comes to soups. What better time to taste a new soup than an indulgent chilly weekend, right ? This Thai inspired Coconut Noodle soup filled with veggies was a hit at home considering we are not fans of coconut milk at all. I used the light coconut milk (2nd extract) for this soup, but if you like you could use a mix of 1st and 2nd extract or even blend coconut cream + 2nd extract to make this soup.

What goes into this Thai Coconut Veg Noodle Soup

Warming spices / aromatics like Ginger and Crushed Black pepper add to the oomph of this broth. This can be had as a soup or a whole meal by itself. I have used my homemade veg stock to add heaps of flavour into this , but you can use plain filtered water too. Addition of noodles is optional, but as we had this as a complete meal WITH some veg momos, noodles added a lot of meatiness to make the entire meal hearty and healthy.  Let’s get to the recipe now.

Tips to make a great Thai Coconut Veg Noodle Soup

  1. Feel free to use udon Noodles / Hakka Noodles / Flat noodles for a Non -GF version.
  2. Thick Coconut milk can also be used, be sure to add it at the final stage, else the soup may split
  3. Any combo of veggies can be used.

What you need for Thai Coconut Veg Noodle Soup:

  • 300 ml Homemade Veg Stock
  • 150 ml Thin Coconut Milk
  • 2 TBSP Olive oil
  • 100 grams Mixed veggies (I used 50 grams Zucchini, 4 tbsp Coloured Peppers, minced french beans 1 tsp , 1/2 peeled Potato)
  • 1/2 tsp Mixed herbs – 1 tsp
  • 1 tsp Chilli flakes
  • 1 Bay leaf (skip if your broth has this already, like mine did)
  • 1 TBSP Garlic (finely minced)
  • 2 TBSP Shallots (optional)
  • 1 TBSP Ginger grated
  • 1 tsp Crushed Black pepper
  • 1 tsp Salt or to taste (adjust accordingly if the stock has salt already)
  • 100 grams Noodles ( I used GF Rice Noodles)
  • 6 Cherry tomatoes (split use)

How to make Thai Coconut Veg Noodle Soup:

  1. Cook Noodles as per packet instructions, drain and reserve with a dash of olive oil.
  2. In a pressure pan / soup pot, add olive oil. Saute garlic, ginger, shallots and bay leaf with a pinch of salt. add half of the halved cherry tomatoes, let them blister a bit. Now add in the mixed veggies and saute them well. Add the veg stock / Veg broth, crushed pepper and pressure cook for 1 whistle (or cook till the veggies are slightly softened , yet have a bite, if using an open pot).
  3. Once the pressure dies down, add the chilli flakes and remaining cherry tomatoes. Adjust salt and spice and add the cooked and drained noodles. Let it simmer for 3-4 min. Add the coconut milk and let it simmer for 1 more min.
  4. Switch off the flame and serve it hot.

Ingredients
  

  • 300 ml Homemade Veg Stock

    I love Thai flavoured soup. This Thai noodle soup looks scrumptious. I just need a warm bowl of soup for the cold and wet weather here. It is so easy to make and nutritious too.

    With the coconut milk, vegetables and noodles going in, this soup is a meal in a bowl. Super comforting and just perfect for cold winter days too.

    I have always found it strange how people in warm climates love soup. Caribbean people also love soup and the varieties of soup we make are endless! I love coconut milk in anything and this is such a delicious and fragrant soup.

    Usually i crib a lot about winter. After seeing your one pot soup, I feel a lot blessed to be able to have a winter to hug that bowl of soup and make everything better ( may be less cribbing too!!).
