Cheesy Veg Pasta



Cheesy Veg Pasta is an anytime favourite in my family, esp for S and kiddo too J Quick to rustle up for dinners / Sunday lunch, I add most veggies into this to make it a healthy treat ! You may vary the quantity of spices added to this dish if serving to adults.


Prep time : 20 mins. Cooking : 10 mins. Serves : 2
 
Ingredients:
·         Pasta – any form – 1 cup
·         Onions –  1 large – sliced lengthwise
·         Garlic – 2 pods (cut fine)
·         Capsicum – ½ - julienne cut
·         Tomatoes – 4 large
·         Cheese – 1 cup (shredded)
·         Shelled Sweet Corn – 1 /4 cup
·         French beans – ¼ cup – cut lengthwise
·         Carrots – ¼ cup – cut lengthwise
·         Spice mixture : Oregano, Basil, Thyme – each ½ tsp. Red chilli flakes – 1 tsp
·         Salt – to taste
·         Olive oil – 2 tbsp
Method:
1)      Wash, peel and cut the veggies (except corn and onions) into 2 inch long pieces. Boil in salted water for 10 mins / alternatively microwave them for 8 – 10 mins.
2)     Blanch the tomatoes and puree them
3)     Make pasta as per packet instructions
4)     Heat a wok. Add olive oil. Fry garlic, onions well.
5)     Add the tomatoes, salt, and boiled veggies. Stir.
6)     Now add the pasta and mix and add the shredded cheese (retain 2 tbsp of cheese for garnish). Mix on a low flame
7)     Add the dried herbs now. Top with red chilli flakes
8)     Transfer to a serving dish and garnish with cheese. Serve hot.
